Apple, carrot, zucchini & maple butter cookies

I paid the bill after my trail running outing with Moose our Australian Shepherd! Maple butter on cookies filled with fiber and protein!! With the touch of maple butter, it's simply decadent!

  • Yields 16 cookies
  • Preparation 20 minutes
  • Cooking 25 minutes

Ingredients :

  • 1/4 flax meal
  • 1/2 six-grain flour or your choice
  • 1 cup neutral-flavored plant-based protein powder
  • 1 cup large rolled oats, or barley flakes, or spelled flakes. I like to mix the three kinds, it's richer in nutrients.
  • 1 C. chia seeds
  • 1/2 tsp baking soda
  • 2 tbsp. baking powder
  • 1 C. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 cup vegetable oil or 1/4 coconut oil, melted
  • 1/3 cup of granulated sugar liquid part
  • 1/3 cup of granulated sugar dry part
  • 2 eggs
  • 1 C. vanilla
  • 1/2 cup supreme coconut milk or Greek yogurt
  • 1/2 cup pecans
  • 1 1/2 cup grated zucchini
  • 1 1/2 cup grated apples
  • 1 cup grated carrots
  • 1 jar of maple butter 250g for filling
Preparation :

  1. Preheat the oven to 375°F and place the rack in the middle. Put a wax paper in the cookie sheet.
  2. In a large bowl, combine all the dry ingredients except 1/3 of the granulated sugar. To book.
  3. In another bowl, using the electric mixer, whisk the oil, the second 1/3 of the granulated sugar, the eggs, the vanilla and the coconut milk, until you obtain a homogeneous mixture.
  4. Add the zucchini, apples, carrots and mix well with a spatula.
  5. Incorporate the dry ingredients using the mixture.
  6. Divide the mixture using an ice cream serving spoon to obtain equal portions.
  7. Bake for 20 minutes or until a toothpick inserted in the center of a cookie comes out clean.
  8. Let the cookies cool and garnish with maple butter…

** Little tip for heating maple butter. In the microwave, heat the butter for 10 seconds and stir it between every 10 seconds until you get a butter in a more runny cream. Be careful not to overheat the butter! Otherwise you risk losing the initial texture on cooling.
